Buttermilk Pie- My way

Happy Big Poultry Consumption Day  happy blog followers! Today I am premiering my screw up daring twist on Jo from Smile Monsters' recipe for Buttermilk Pie. Jo linked up to Wickedly Crafty Saturdays with two different recipes for Buttermilk Pie. She was having a showdown to see which version her family liked best. I tried recipe #1.  But had to make some adjustments due to my not paying attention at the store originality. Here is Jo's version.

Recipe #1

3 eggs
1 cup of sugar
2 tablespoons flour
1/2 cup butter(melted)
1 cup buttermilk
1 teaspoon vanilla
1 9" pie shell(unbaked)

Preheat oven to 325 degrees

Beat eggs slightly then add sugar and flour.
Now add butter and mix well.
Last add buttermilk and vanilla.
Mix together well.

Dust pie shell with a bit of flour, pour batter into shell, sprinkle a little more flour on the top.

Bake at 325 until the custard is set or a knife comes out clean. Approximately 1 hour.

Now to explain to you what I did to keep from having to run back out  show my creativity.
One thing I advise is not to talk on your cell phone in the store while you are working from the shopping list "in your head". Instead of grabbing this:

I grabbed this:
Yeah, I know, they are not even in the same isle. One is over by the Dairy cases & the other with box mix cakes & stuff. Well mine happened to be on an end cap & like I said, I was on the phone & therefore .....distracted.  Plus I forgot to by the Buttermilk.

So I am hope getting ready to whip up the pie filling when I realize I have the graham cracker crust. After I call myself every name in the book get done berating myself I figure what the heck  go for it. Yup, even without the Buttermilk too.

I basically used Jo's recipe but changed it up just a bit

3 eggs
1 cup of sugar
2 tablespoons flour
1/2 cup butter(melted)
1 cup buttermilk   1 cup regular milk with 1 tablespoon vinegar added
1 teaspoon vanilla
1 9" pie shell(unbaked)  1  9" Graham Cracker Crust

Preheat oven to 325 degrees

Beat eggs slightly then add sugar and flour.
Now add butter and mix well.
Last add buttermilk substitute and vanilla.
Mix together well.

Dust pie shell with a bit of flour, pour batter into shell, sprinkle a little more flour on the top.
Bake at 325 until the custard is set or a knife comes out clean. Approximately 1 hour.

I let the pie cool before I sliced a piece for myself to try. It looked like this:

The edge of the graham cracker crust got brown but did not burn luckily just as I had planned! The white specs are just some of the flour that I sprinkled on before baking. You can brush those off or just leave them be. Sliced it looked like this:

The bottom of the graham cracker crust swelled with the moisture from the filling & melded with the filling to create an experience your taste buds will love you for. So from now on when I make this pie I will keep on using the graham cracker crust. I love it. It is so delicious. Thanks you Jo for the idea & thank you me for screwing up.

I hope all of you have a wonderful Bird Day.
Great Gobbles everybody!

20 Kid-Approved Casserole Sides - Yeah Right!

I get this email today from Parents Magazine titled  20 Kid-Approved Casserole Sides. So I think Okay I'll bite & I open the email & hit the link to go to the site the see these wondrous dishes. They even tell me "You're Welcome Mom" before I even click the link. Okay, here's how that went:

Tortellini Casserole -  I look over the recipe. Okay, my kids would have eaten this.

White Cheddar Mac & Cheese - First thing before I even click to see the recipe. I notice the peas. Nope my kids would not have touched it. My kids are now 32, 28 & 27 & they still would not touch it. Heck I wouldn't touch it!

Chicken Enchilada Casserole - Refried beans. Scratch that one.

Ravioli Lasagna - Has zucchini .....NEXT!

Chicken & Broccoli Casserole - Didn't even have to check the recipe. Broccoli? Not gonna happen.

Chicken Pot Pie - Sorry but no. It has carrots. (I was surprised there were no peas in this)

Tex-Mex Mac & Cheese - Maybe without the whole wheat pasta.

Hearty Lasagna - Here is one that would work.

Turkey Amandine - Almonds.....nope.

Beef Nacho Casserole - Olives & sweet peppers. My kids would ask if they could have cereal instead.

Polenta Lasagna - Okay...polenta = corn meal mush, oh & there is zucchini again.....(sigh)

Beef & Bean Tortilla Casserole - Kidney beans.  Moving on.

Spaghetti - Pepperoni Pie - Okay. I could get away with this one.

Cheeseburger-Zucchini Pie - There is the Z bomb again.

Sweet Potato & Bean Casserole - Chic peas, white beans, red kidney beans & sweet potatoes......(where are they getting these kids?) Heck I am making the gagging motion here!

Tortellini-Alfredo Casserole - Broccoli again. Nope!

Hearty Hot Dog Casserole -  Not with sauerkraut & my kids.

Pork Chop "n" Rice Casserole - Jalapeno diced tomatoes & green pepper.  (I'm just shaking my head)

Pizza Casserole -  Zucchini?!?! Green peppers. (I'd have better luck getting them to clean their rooms)

Eggs-for-Supper Casserole - Surimi....had to google that one. It means fish puree. Really? With eggs & creamed corn? Fish puree. No not happening. I wouldn't even attempt to bring the stuff in the house. (Not to upset anyone about that but thats how I feel. Sorry if you are a lover of Surimi)

Three dishes out of 20 that I could have served my children when they were young. And three dishes out of 20 I could serve my kids now that they are grown. I would love to know who these kids were that approved these dishes. They should be put under scientific study cause they must be a rare species.
Sorry Parents Magazine but you said you are welcome way too soon cause I can't say "thanks" for this list of recipes. (really sorry but thats just how its gotta be)

Here is the link check it out for yourselves.

I am thankful that I had the common sense to not even attempt to serve dishes like this when my kids were young, sparing me the grief that would have definitely gone along with it.

Thrift Shop & Lunch at Frida's Cafe

Alright busy  readers I am back with another post about Thrift Stores & the wonders they hold. Today I stopped & picked up our friend Joy. She is the one that got some of the Pumpkin Mousse & one of my $.10 scarecrows. Here she is checking out a snowman.

After much scrutiny Joy decided the snowman was good enough to be taken home.

Joy is 83 yrs young. Man I wish I had her energy!
Now on to my loot. First I found some puzzles for my grandson Ryan. These were new & still in their original wrappings for a buck each.

Next I found some awesome crafty stuff for MEGA CHEAP! Here we go......high five.

This pile of wonderfulness was $5.00 for everything. Each bag of 12 styrofoam balls were $.25. I was amazed at the price. I struck gold boys & girls. Each wreath form was $1.00. And my giant bag of different sized & colored pom poms was $2.50.  There are so many colors & sizes I am set for life with all these pom poms.

Joy found this baby girl Santa hat under a pile of Christmas stockings for $.50. I have snagged it for my granddaughter Jessica. Now I just have to get a skull  to attach to it & she will be quite festive!

Got this pile of handcrafted Holiday trivets for $1.00.

All of these little stuffed animals & do dads were crammed into a plastic bag with a $1.00 price tag also.

For $.50 I got this tag still attached plastic snowflake box that I am going to use to make Yule Bath Bombs.  I ended up spending $10.50. Not bad for all my goodies.
Next we headed to Frida's Cafe in Largo for lunch & to celebrate our great finds. Joy & I each had the Signature Sandwich with chicken salad. (you can get it with tuna too but Joy & I are both chicken salad fans)

There is Joys plate. The sandwich also comes with your choice of chips or coconut bread. Joy loves coconut so much she chose that & for her dessert she got a coconut doughnut.

I opted for the Grand Marnier Mousse that had a solid chocolate covering & a cute little cookie worm thingy stuck on it. The coffee is excellent there also. Check out the size of Joy's doughnut in the back. The thing was huge!
I took a couple of shots of the display cases at Frida's Cafe. Look at all that delicious yummyness just waiting to be attacked with a fork!

Doesn't all that stuff look awesome? Oh to have seen it in person was quite an experience folks I tell ya that.  I have never been walked out of Frida's Cafe hungry & everything I have had so far has been fantabulous.

I am thankful for the yummyness to be found at Frida's Cafe.

My Son's Daddy Dollars

Like any parent my son, Shannon has been beating his head against the wall trying to get his children to do their chores around the house. So he has come up with his point system of Daddy Dollars. Now we all know that kids love money. When my 5yr old grandson Bradley saw his daddy printing out the Daddy Dollars, he had no idea what they were about just then but he announced that he wanted Daddy Dollars. My daughter-in-law checked the dirty clothes hamper & saw that Bradley had placed his dirty clothes in the hamper. That earned him one Daddy Dollar.  Shannon had the kids make & decorate their own envelope to hold their earned Daddy Dollars. Daddy Dollars come in $5 & $1 denominations & look like this:

My son said he always thought his face should be on money!

Now $10.00 in Daddy Dollars can "buy" 20 minutes of video game time. The kids can also use Daddy Dollars on Tuesdays or Thursdays to get a Happy Meal from McDonald's when Happy Meals are $1.99. Of course it will probably cost $5 in Daddy Dollars to get said Happy Meal. My son is still working on the "point" system of how the Daddy Dollars will be redeemed. My daughter-in-law asked my son "Well, what if I want them to get something done"?  My son said he will have to print her up some Mommy Money. I will do a follow up on this at a later date to let you know how this is working out. So far the boys have both earned 8 bucks in Daddy Dollars. My granddaughter Jessica is 9 months old & is too young to start earning Daddy Dollars. My 5yr old grandson even took it upon himself to empty the bathroom trash! That & replacing the empty toilet paper roll on the holder earned him one Daddy Dollar for each chore. I am amazed that the kids are doing things right now without even being told to.

I am thankful that my three kids have all grown up & are some wonderful people.
