The Broom is Restless!

Well Blogland, my Broom has finally settled into the frozen tundra that is PA. (at least someone has) Yesterday morning as I headed out to my car for the ride to work ( Yes, I take the car. People look at you funny when you are on a broom at an intersection), I noticed all the sparrows hanging around the bird bath just looking at it. So I decided to take a peak too. The water was frozen! Great Gods Momma Nature, it's the middle of May!

But I am getting off subject here. My Broom tested the air today & it is a balmy (yea right) 69 degrees. For the frozen tundra, 69 degrees is balmy. So off we went!

Orange Creamsicle Cupcakes with Marshmallow Icing

Happy Wednesday to all of you in Blogland! Today I want to share yet another wickedly delicious recipe with you. Orange Creamsicle Cupcakes w/ Marshmallow Icing. This is the most decadent yet easy dessert to make & people will love you for it. Take it from me, I know. 





I followed the cake recipe from Food.com here:

But instead of the cake, I did cupcakes. I did not use the sites suggested icing made with cream cheese. Instead, I used :
2 bags of mini marshmallows
2 tubs of whipped topping
2 tsps of vanilla extract

Nuke the marshmallows in the microwave. Set for 20 seconds, stir & nuke again for 10 seconds at a time until all the yummy little marshmallows are melted & creamy. Let cool slightly, but not too much cause you want it workable. Next add whipped topping & vanilla extract & stir. Not to worry if the whipped topping "melts" a bit. You are gonna stick this stuff in the fridge anyway & when you stir it after 20 minutes in the fridge, the whipped topping comes back to life. Like magic! lol

Make sure you keep your cupcakes in the pan while you add the orange jello. Remember, only 1 cup of hot water! Do not add the cold or your jello will be mega thin.

Ice with your Marshmallow Icing & watch them disappear!

I have to take an extra one into work today for one of my girls. I had saved one for her but somebody else snagged it before she did. No one has fessed up to the yummy crime either! I kinda think it is cool cause it tells you just how wonderfully delish these babies are.

Bacon Wrapped Chicken

Morning Blogland! I am sure quite a few of you have seen the recipe for the bacon wrapped chicken with cream cheese filling. Well, your truly did & I decided that I so had to try that wickedly delicious looking concoction. Of course being the creative soul that I am, I had to change it up a bit. Started off with the cream cheese & green onion:





I nuked my cream cheese for about 30 seconds for easier mixing. Hey, why make it hard on yourself!



And since I don't follow directions all that well sometimes, I added more stuff to the cream cheese & green onion filling!





Yup, my ever handy Thyme & Marjoram! Plus some fresh ground pepper & some garlic powder. I put no salt in this since the chicken would be wrapped in bacon. No sense tempting the fates, right?


Meanwhile, bacon was getting slightly cooked. Don't forget to save the bacon grease & put in the fridge! I use mine for frying eggs or seasoning green beans & such. Is my cholesterol high? Probably.





Since buying our house, certain items have not yet been located. Like my meat mallet. So it was time to improvise!





Instead of pounding the chicken breast like I was Mike Tyson in the ring, I opted to cut them in half, thickness wise. (does that make sense to you? thickness wise? cause it does to me but hey, I am me) The chicken breasts were slightly frozen, making it much easier to preform the task.

Setting them aside to finish thawing, I mixed up my cream cheese mixture. I like to bruise (smoosh) my spices to release some extra flavor & smells. Just a bit in the palm of your hand.





Using the heel of my other hand to smoosh the spices, releasing the most wonderful of aromas throughout my kitchen & house.






Used the same palm sized amount of marjoram & thyme. Maybe a quarter tsp of garlic powder, & a few wookah wookahs with the pepper. (wookah wookah is the sound that the grinder makes. at least in my head anyway)






I have no idea why the chicken in the upper part of the frame looks so gross. Lighting I  imagine. Cause I don't ever serve anything funky! Just ask my Hubs.

Place your cream cheese mixture on the chicken & roll it up, tucking the ends under neatly! (yea....right!)





Place your pan in a preheated 350 degree oven, uncovered for about 35-40 min.







Did somebody just use bacon & chicken in the same sentence?!?!?!?






Before serving, I spooned a bit of the juices over the chicken. Cause I do stuff like that!





If planning on doing a bit of photo journalism, feed a snack to hungry Hubs first so he doesn't dig right in before you have a chance to snap a pic!

Me & My Broom & the tree pollen is high


Morning Blogland! My Broom decided it was a great morning to fly around Blogland since our last trip was way too long ago. My allergies decided to fly along with us. (nice of them) Anyway, we had a great sneezy time & here is where we went!


















My Broom is ever so eager to keep on track flying around Blogland. I fear very many early mornings to come for me.

Walk MS Walk Update

Twice in one day Blogland! Yay me! I wanted to let you all know how great the Walk MS walk went last weekend. Okay, yes it rained like a beast as soon as the opening comments were done, But hey, good cause & all that right?



Meet Jim. Jim used to work at Tobacco World before his MS became too bad. Jim is a trooper though. This wickedly awesome guy managed to do a mile in the pouring rain!



June & I walked on Jim's team. I didn't get to make it to Maryland to walk on my son-in-law's team. (my son-in-law was diagnosed with MS late last year)


Doggies showed up too!




Some even wore the walk colors!

Even though we got soaked, it turned out to be a great day. Loads of caring people all coming together for a good cause.

June & I plan to start our fund raising earlier next year. Hopefully we will raise more than $1,600.00.

Strawberry Shortcake

Great Sunday to you Blogland. Today I want to share with all of you my granddaughter's Strawberry Shortcake hat  that I made for her way back when I lived in the land of warm (Florida). I knew she would need a hat once she moved up to the frozen tundra (PA.) Remember this?




I even made a scarf to match. I do try to be a most wickedly awesome grandmama.

Here she is with her new gear!





She loved is so much that she had to wear it all day. She even fell asleep while wearing it & watching videos in her room.




My Little Miss Thing is such a Fashion Diva & loves to look at herself in my camera with the reverse action going on. Here she is checking herself out with her Strawberry stuff.

Getting Ready for the Walk MS walk!


Howdy-hi Blogland! Hope all is wickedly awesome with all of you. We had our raffles yesterday at Tobacco World. I must say the zeal in which the people of Uniontown showed had me floored! The drawings began at noon. Then winners were notified. Within an hour, 4 of the the 12 prize packages were already picked up by the winners. By the end of the day only 2 of the 12 were left at the store. The dear lady that won first prize in the 11 Chances to Win raffle, couldn't get a ride to the store until today, otherwise, she would have picked up her prize package too. It was so wonderful to see the people's faces as they claimed prizes such as:

12 Free Tanning Sessions
Free 9 holes of golf for 4 along with golf cart usage
Numerous dining gift certificates (heaps of these!)
Gift certificates for local Florist Shops
Free Video rentals
Pizza
Donuts & bagels
